Toffee Caramel Bars With Eagle Brand Sweetened Condensed Milk

Sometimes it’s nice to put down the pasty bag and make something that you know is just going to be so delicious on its own. I’ve been craving these yummy soft coookie/toffee/chocolate topped bars this holiday season. I knew they would be the perfect dessert to feature Eagle Brand Sweetened Condensed Milk which is one of the ingredients that makes the toffee center of these easy-to-make bars.

toffee bars

Look at those sweet soft layers!

toffee bars

The bottom layer is a shortbread dough that bakes as a cookie. It is spread out into the bottom of a pan and baked. If you’re running in and out of the kitchen you can make the cookie base ahead of time and finish the second and third layer later.

The second layer is the toffee layer made with Eagle Brand Sweetened Condensed Milk and other sweet ingredients. It is cooked to a caramel-ly color and poured over the cookie base. The hot toffee layer is then topped with chocolate chips where the heat from the the toffee layer melts the chips to a spreading consistency. If your kitchen temp. runs on the cooler side you can pop the pan into a warm oven to help melt the chips just for a minute or two until they are shiny and then they’ll be ready to spread with a spatula or knife.

After spreading the chocolate smooth is where you can get more creative with your topping ingredients – you can add chopped nuts (I added chopped pecans), shredded coconut and or chopped dried fruit. Drizzling white chocolate or festive color candy melts would also be pretty.

These would be perfect to serve as a sweet bite after dinner or to take to a holiday party.

Let me know if you try out this recipe. 🙂

Toffee Caramel Bars
A three layer bar consisting of a soft cookie crust topped with a soft toffee caramel and chocolate. Very easy and very good. 🙂
Print
First Layer - Cookie Crust
  1. 1/2 cup, plus 2 Tablespoons butter, room temp.
  2. 1/4 cup granulated sugar
  3. 1 1/4 cup all-purpose flour
Second Layer - Toffee Caramel
  1. 1/2 cup butter
  2. 2 Tablespoons light corn syrup
  3. 1/2 cup brown sugar, packed
  4. 1/2 cup Eagle Brand Sweetened Condensed Milk
Top Layer - Chocolate & Nuts
  1. 12 oz. chocolate chips
  2. 3/4 cup pecans, chopped
Instructions
  1. For the Bottom Layer: Combine the butter, sugar and flour. Press into a 9x9 inch pan. Bake at 350 degrees for 20 minutes or until golden. Set aside.
  2. For the Second Layer - Toffee Caramel Layer: Combine butter, sugar, corn syrup and sweetened condensed milk over medium heat stirring constantly. Bring to a boil and boil 5 minutes or until carmel in color, still stirring constantly. Pour over the cookie crust.
  3. For the Third Layer - Sprinkle chocolate chips over the hot toffee layer. The heat from the toffee will melt the chocolate. When the chips are shiny and are melting, spread smooth with a spatula. If the chocolate chips need more help in melting place the pan in a warm oven for a minute or two.
  4. Sprinkle with nuts or coconut or drizzle melted candy melts.
Notes
  1. Cool in the fridge to harden the chocolate. Cut into squares or bars when the chocolate is set but letting the pan sit at room temp for awhile will make for easier cutting. The bars do not need to be refrigerated once it is set.

Gentleman Jack (Jack Daniels) Cupcakes Recipe

Gentleman jack Cupcakes

Chivalry is not dead. And ladies, we need to invite and welcome it back into our lives again. I think it’s good for all parties involved.  When you think about it, when a stranger opens or holds the door for you, two smiles are exchanged and if you’re feeling particularly friendly the cherry on the top of the obligatory “thank you” might be to say, “That was really nice of you”.  A widened smile will always greet you in return… [Read More]

“The Best Ever – Blue Ribbon Winning – Chocolate Layer Cake – In All The Land”!

Being a Child of the 60’s, not as in Woodstock, but more like Sally Draper but with non-smoking, non-drinking, loving, supportive parents that actually liked their kids, these were my earliest baking recollections with my mom: Dream Whip. Dolloped on top of a boxed gingerbread cake.  My feet tucked under my knees on the kitchen chair watching her transform dense, brown holiday loaves filled with yellow and green cubed sticky stuff into baked jewelry.  The candied cherry halves on top… [Read More]

Pretty Pink Petal Cake – A Wilton Cake Decorating Technique

When I told my friends I was going to take the Wilton Course 1 Building Buttercream Skills class at Jo-Ann Fabric and Craft Store they thought I must be going to teach the class.  After all, I’ve been decorating cakes using the Wilton method since before I was married and I’ve been married, shall we just say, decades? I told them I was going to learn new techniques and perhaps brush up on ones I was already familiar with.  And… [Read More]

Chocolate – Chocolate Chip Marshmallow Cookies

Twenty-two years ago I bought a delightful cookie book written by Debbi Fields.  Yes, the cookie maven, Mrs. Fields.  It was the third cookbook I owned in which turned out to be a vast collection. One recipe alluded me back then – Jessica’s Marshmallow Clouds.  When I had made the cookies, the marshmallows melted into the cookies and disappeared.  I wasn’t the adventurous baker then as I am now (ahem) so I turned the page and went on to other… [Read More]

The Espresso Martini

This cocktail is absolutely delicious and very special. It’s made with Bailey’s Irish Cream, Kahlua, Frangelico and double espresso vodka.  I don’t know what it is about it but it’s hard to resist after dinner. Did I say dinner? Don’t feel you have to limit yourself. I’ve been known to split one with a friend after lunch. The thing is, we then order another one to split. I know the math. What can I say? It’s goes down like silk… [Read More]

Mini Boston Cream Valentine’s Day Cupcakes!

mini boston cupcakes

Three words… Begin with the cutest mini cupcakes wrappers ever by Meri Meri. They are part of the give-away I’m hosting that ends on Friday. Fill them with your favorite vanilla cupcake batter.  My recipe is at the end of this post, hot stuff. While the cupcakes baked I made Julia Child’s recipe for pastry cream.  And just like Julia, I made it thicker and added a little cream after it completely cooled to thin it out.  As Julia said,… [Read More]

The Best Pecan Pie and Painted Dough Cut-Outs

“Of Pie I Sing” – A remembrance, a recipe and an idea  Funny how we tend to keep the traditional childhood foods in our adult repertoire – especially if one is the host or hostess preparing the fare – unless we make a conscious effort to break the proverbial cranberry mold. My childhood Thanksgiving dinner consisted of the good, the bad and the mysterious. My mom would toil over the turkey rising at dawn to put the bird in the… [Read More]

Icy Italian Citrus Granita

If the name “granita” is not familiar to you, it’s an icy Italian dessert that resembles shave ice in texture and is possibly the most light and refreshing treat you can make this summer. In the snooty culinary world of terminology I’d call it a “deconstructed” popsicle. The ingredients are simple: fresh squeezed citrus juice, sugar and water. No special ice cream making equipment is necessary. If you’ve got a metal cake pan or baking dish and a fork, you’ll… [Read More]

Pineapple Sherbet

If you haven’t tried homemade pineapple sherbet with fresh lemon and orange juices you don’t know what you’re missing. Prior to this frozen epiphany, I had only tasted store bought from 31 Flavors which left me ordering Daiquiri Ice next time. Words I would use to describe ~ cold, icy, refreshingly fresh. And a phrase ~ “One more little cone won’t hurt.” And a sound ~ *sigh* What is particularly nice about this recipe is that it makes 4 quarts… [Read More]
